“Miss Eula,” as she was known, entered the business world when she and her husband purchased a small community grocery store along the Little Teche Bayou, near Opelousas, in 1949.
Using her mother’s recipes, Ms. Savoie began making smoked sausage and boudin in the 1950s and sold the products in the country store. Savoie’s sausage and boudin proved to be a huge success and were followed more products.
Savoie’s food products can now be found in retail food stores in Louisiana, Texas, Mississippi, Alabama, Georgia and Florida. The company’s andouille and roux are distributed nationwide to retail and foodservice distribution to restaurants. Savoie’s Cajun Food Products are produced in two processing facilities.
Ms. Savoie grew up speaking both Cajun French and English, and was an advocate of preserving Cajun culinary traditions and culture. She is survived by her two children and three grandchildren.
