DES MOINES, IOWA — Kemin has formulated a line of food safety ingredients for hot dog processing applications. The BactoCease line, which may protect food from Listeria monocytogenes growth and may extend product shelf life for hot dogs, includes BactoCease, BactoCease NV, and Proteus.
BactoCease is a liquid propionic acid-based antimicrobial system that requires a lower application rate compared to regularly used sodium lactates and diacetates, according to the company. BactoCease may be used for ready-to-eat meat and poultry products.
BactoCease NV is a buffered vinegar product for pathogen control available in liquid, dry and no-sodium forms, the company said. BactoCease NV may be used in brines, marinades, spice blends or directly applied to meat.
Proteus are functional proteins that provide manufacturers with a clean label yield and quality enhancement solution, the company said. Proteus also may increase moisture retention in meat and poultry products.
