MADISON, WIS. — The University of Wisconsin-Madison announced an extension for accepting applications to its 2024-2025 Master Meat Crafter Program. The program’s short course Wisconsin Harvest & Fabrication School, which was originally slated for Nov. 14-16, 2023, will now be held March 26-28, 2024, the university noted.

The short course takes a higher-level comprehensive approach to understanding animal harvest and fabrication of amenable species like beef, pork, lamb and poultry. Instructors will teach principles, science, regulations and food safety through demonstrations and hands-on group activities. There will also be time for individualized teaching throughout the course, the university said.

The Master Meat Crafter Program is the first of its kind at the UW-Madison to offer meat industry training.

The approximately two-year program requires completion of four elements for successful graduation and subsequent distinction as “Master Meat Crafter.”

The elements, which function as three-day workshops, include:

  • Animal Harvest & Product Utilization School (Jan. 23-25, 2024)
  • Fresh Meats School (May 7-9, 2024)
  • Food Safety & Meat Microbiology School (Aug. 13-15, 2024)
  • Meat Curing School (Jan. 14-16, 2025)
  • Cooked & Emulsified Sausage School (May 20-22, 2025)
  • Fermented & Dry Cured Meat Product School (Sept. 9-11, 2025)

The program is limited to 35 participants per class.
