DARBY, MONT. — Jerky company Sovereign Warrior announced the launch of new meat snack products made from grass-fed and finished bison.

A representative for the Darby-based plant said the company hand trims and slices its meat and marinates it for 36 hours while using no preservatives, nitrates or MSG during the production process. The new offerings include the OG Original, Firefighter Pineapple Habanero, Bulgogi Korean BBQ and The Gaucho-Chimichurri. 

“Our goal at Sovereign Warrior is to create jerky that not only nourishes but honors the bison,” said Yasmeen Sokol, co-founder of Sovereign Warrior. “We focus on crafting something pure, made with care, quality and respect, from start to finish.”

The OG Original recipe was inspired by Worcestershire sauce. The item features organic gluten-free tamari, anchovies, garlic, onion, black pepper, honey and tamarind. The FireFighter Pineapple Habanero flavor features a sweet and spicy mix of organic pineapple juice, raw honey, fresh habaneros and spices. The Bulgogi Korean BBQ is distinguished by a deep flavor of gochutgaru, pear nectar, honey, ginger, garlic and scallions. The Gaucho-Chimichurri is a zero-sugar option made with fresh cilantro, parsley, shallots, garlic, organic apple cider vinegar, Redmond Real Salt and organic extra virgin olive oil.

The company also sells bites of bison under the flavors of The Maverick Teriyaki, the Pioneer Black Pepper Bites and the Trailblazer Pepperoni Bites.

“We source 100% grass-fed bison for the Bites from Creekside Ranch, just five minutes from our facility, and for our whole muscle jerky we have partnered with Wild Idea Buffalo, a leader in humane and regenerative practices,” the company said. “Wild Idea’s buffalo roam freely across the open plains, never confined to feedlots, or subjected to grain-based diets. Their humane field harvesting approach ensures minimal stress to the animals.”

According to Sovereign Warrior, all bison used are antibiotic and hormone-free. The items are gluten-free and paleo-friendly.
