ANKENY, IOWA — Essentia Protein Solutions announced the launch of its P1302 Spray-Dried Premium Natural Pork Stock.
The label-friendly pork stock may help pepperoni manufacturers increase plant throughput, the company said. It allows for higher protein and moisture values in pepperoni and dry sausage, which equates to a higher yield.
The high-protein powder also allows manufacturers to hit a target moisture-protein ratio faster, resulting in decreased drying times, said Pat Hosch, meat applications research manager at Essentia Protein Solutions.
“Adding dried pork stock is an easy and label-friendly way to bump up protein levels without drastically changing your lean and fat meat block,” Hosch said.
